How To Make Portuguese Tomato Rice Recipe

A flavorful rice dish that combines the sweetness of tomatoes with fragrant herbs and spices.

Ingredients

  • 2 cups long-grain rice
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 medium tomatoes, diced
  • 1 tbsp tomato paste
  • 2 cups vegetable or chicken broth
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnishing

Instructions

  1. Rinse the rice and set it aside.

  2. In a large pot or Dutch oven, heat olive oil over medium-high heat.

  3. Add the onion and red bell pepper and sauté for 3-4 minutes until onion becomes translucent.

  4. Add garlic and cook for another minute.

  5. Add the diced tomatoes, tomato paste, paprika, oregano, salt, and pepper.

  6. Stir and cook for another 5 minutes.

  7. Add in the uncooked rice and vegetable or chicken broth, stir to make sure the rice is evenly distributed.

  8. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it cook for 20 minutes.

  9. Turn off the heat and let the rice rest for another 5 minutes.

  10. Fluff the rice with a fork, top with fresh parsley, and serve hot.
