How To Make Portuguese Tomato Rice Recipe
A flavorful rice dish that combines the sweetness of tomatoes with fragrant herbs and spices.
Serves:
Ingredients
- 2 cups long-grain rice
- 3 tbsp olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 2 garlic cloves, minced
- 2 medium tomatoes, diced
- 1 tbsp tomato paste
- 2 cups vegetable or chicken broth
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnishing
Instructions

Rinse the rice and set it aside.

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Add the onion and red bell pepper and sauté for 3-4 minutes until onion becomes translucent.

Add garlic and cook for another minute.

Add the diced tomatoes, tomato paste, paprika, oregano, salt, and pepper.

Stir and cook for another 5 minutes.

Add in the uncooked rice and vegetable or chicken broth, stir to make sure the rice is evenly distributed.

Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it cook for 20 minutes.

Turn off the heat and let the rice rest for another 5 minutes.

Fluff the rice with a fork, top with fresh parsley, and serve hot.
