How To Make Portuguese Chorizo and Bean Stew Recipe

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 8 ounces Portuguese chorizo, sliced
- 2 tablespoons tomato paste
- 2 cups chicken broth
- 2 (15-ounce) cans white beans, drained and rinsed
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red pepper and cook until softened, about 5 minutes.

Add the chorizo and cook until it starts to brown, about 5 minutes.

Stir in the tomato paste and cook for 1 minute.
