Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 8 ounces Portuguese chorizo, sliced
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 2 (15-ounce) cans white beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red pepper and cook until softened, about 5 minutes.

  2. Add the chorizo and cook until it starts to brown, about 5 minutes.

  3. Stir in the tomato paste and cook for 1 minute.

  4. Pour in the chicken broth and bring to a boil.

  5. Reduce the heat to low and simmer for 15 minutes.

  6. Add the beans and cook until heated through, about 5 minutes.

  7. Season with salt and pepper to taste.

  8. Garnish with parsley and serve.
