Ingredients

  • 1 1/2 lb white fish fillets, cut into 1-inch pieces
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup fish or vegetable stock
  • 1/4 cup fresh parsley, chopped
  • 1 bay leaf
  • 1/2 lb Yukon gold potatoes, peeled and diced
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.

  2. Add the diced peppers and potatoes and cook for 5 minutes until slightly softened.

  3. Pour in the diced tomatoes, fish or vegetable stock, bay leaf, and seasoning. Bring to a simmer and cook for 10 minutes until the potatoes are tender.

  4. Add the fish fillets and cook for 5-7 minutes until opaque and cooked through.

  5. Remove the bay leaf and stir in the fresh parsley. Adjust the seasoning to taste and serve hot alongside crusty bread.
