How To Make Portuguese Fish Stew Recipe

Ingredients
- 1 1/2 lb white fish fillets, cut into 1-inch pieces
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 cup fish or vegetable stock
- 1/4 cup fresh parsley, chopped
- 1 bay leaf
- 1/2 lb Yukon gold potatoes, peeled and diced
- Salt and pepper, to taste

In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes until fragrant.

Add the diced peppers and potatoes and cook for 5 minutes until slightly softened.

Pour in the diced tomatoes, fish or vegetable stock, bay leaf, and seasoning. Bring to a simmer and cook for 10 minutes until the potatoes are tender.

Add the fish fillets and cook for 5-7 minutes until opaque and cooked through.
