How To Make Portuguese Duck Rice
A flavorful and hearty rice dish made with succulent duck and aromatic spices.
Serves:
Ingredients
- 1 whole duck, cut into pieces
- 2 cups of long-grain rice
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1/2 cup of white wine
- 4 cups of chicken broth
- 1 tsp of paprika
- 1 tsp of dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions

Season the duck pieces with salt, pepper, paprika, and thyme.

In a large pot, heat some olive oil over medium heat and brown the duck pieces on all sides. Remove and set aside.

In the same pot, add the chopped onion, garlic, and peppers. Sauté until softened.

Add the diced tomatoes and cook for another few minutes.

Deglaze the pot with white wine, scraping off any browned bits from the bottom. Cook until the wine has reduced by half.

Return the duck pieces to the pot and add the rice, chicken broth, and bay leaf. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1 and a half hours, or until the duck is tender and the rice is cooked.

Remove the bay leaf and stir in some chopped parsley.

Serve the Portuguese Duck Rice hot, garnished with more parsley.
