Ingredients

  • -1 lb. salt codfish, soaked and shredded
  • -2 cups all-purpose flour
  • -2 eggs
  • -1/4 cup chopped parsley
  • -1/4 cup chopped scallions
  • -1 tsp. paprika
  • -1 tsp. black pepper
  • -1 tsp. salt
  • -1 tsp. baking powder
  • -1 1/2 cups water
  • -Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the flour, eggs, parsley, scallions, paprika, black pepper, salt, baking powder, and water. Mix until a smooth batter forms.

  2. Fold in the shredded codfish, stirring until evenly distributed.

  3. In a large pot, heat about 2 inches of vegetable oil to 350°F.

  4. Using a spoon, drop the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.

  5. Remove with a slotted spoon and place on paper towels to drain excess oil.

  6. Serve hot with dipping sauce or as a side dish.
