How To Make Portuguese Codfish Fritters
Crispy and delicious savory fritters, filled with flaky codfish and a blend of herbs and spices.

Ingredients
- -1 lb. salt codfish, soaked and shredded
- -2 cups all-purpose flour
- -2 eggs
- -1/4 cup chopped parsley
- -1/4 cup chopped scallions
- -1 tsp. paprika
- -1 tsp. black pepper
- -1 tsp. salt
- -1 tsp. baking powder
- -1 1/2 cups water
- -Vegetable oil for frying
Instructions

In a mixing bowl, combine the flour, eggs, parsley, scallions, paprika, black pepper, salt, baking powder, and water. Mix until a smooth batter forms.

Fold in the shredded codfish, stirring until evenly distributed.

In a large pot, heat about 2 inches of vegetable oil to 350°F.

Using a spoon, drop the batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.

Remove with a slotted spoon and place on paper towels to drain excess oil.

Serve hot with dipping sauce or as a side dish.
