Ingredients

  • 1 lb. of sirloin steak, thinly sliced
  • 1 tbsp of black peppercorns, crushed
  • 2 tbsp of olive oil
  • 4 cups of mixed greens
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of corn kernels
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of cilantro, chopped
  • 2 tbsp of lime juice
  • Salt, to taste
  • 4 flour tortillas, cut into strips and toasted

Instructions

  1. Season the steak with crushed black peppercorns and salt.

  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat.

  3. Add the steak slices and cook for 3-4 minutes per side for medium-rare.

  4. Remove the steak from the skillet and let it rest for 5 minutes.

  5. In a large bowl, combine mixed greens, cherry tomatoes, corn kernels, red onion, and cilantro.

  6. In a small bowl, whisk together lime juice, 1 tablespoon of olive oil, and salt.

  7. Drizzle the dressing over the salad and toss to combine.

  8. Slice the rested steak into thin strips.

  9. Divide the salad mixture onto 4 plates and top with the sliced steak.

  10. Sprinkle the toasted tortilla strips over the salads.

  11. Serve immediately.
