How To Make Peppered Chicken with Watercress

Ingredients
- 4 chicken breasts
- 2 tbsp black peppercorns, crushed
- 1 tsp salt
- 2 tbsp olive oil
- 4 cups watercress leaves
Instructions

Preheat the oven to 400°F (200°C).

Rub the crushed peppercorns and salt onto both sides of the chicken breasts.

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken breasts and cook for about 4 minutes on each side, until golden brown.

Transfer the chicken breasts to a baking dish and bake for 15 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 5 minutes before slicing.

Serve the sliced chicken on a bed of fresh watercress leaves.
