Ingredients

  • 4 chicken breasts
  • 2 tbsp black peppercorns, crushed
  • 1 tsp salt
  • 2 tbsp olive oil
  • 4 cups watercress leaves

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Rub the crushed peppercorns and salt onto both sides of the chicken breasts.

  3. Heat the olive oil in a large skillet over medium-high heat.

  4. Add the chicken breasts and cook for about 4 minutes on each side, until golden brown.

  5. Transfer the chicken breasts to a baking dish and bake for 15 minutes, or until the internal temperature reaches 165°F (74°C).

  6. Remove the chicken from the oven and let it rest for 5 minutes before slicing.

  7. Serve the sliced chicken on a bed of fresh watercress leaves.
