  • 8 egg roll wrappers
  • 1 cup cooked and shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Vegetable oil for frying
  • Sour cream and salsa for serving


  1. In a large bowl, combine the shredded chicken, Monterey Jack cheese, diced tomatoes, diced red bell pepper, chopped cilantro, chopped green onions, ground cumin, chili powder, garlic powder, and salt. Mix well.

  2. Place an egg roll wrapper on a clean surface. Spoon 2 tablespoons of the filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal the egg roll. Repeat with the remaining wrappers and filling.

  3. Heat vegetable oil in a deep skillet or pot over medium heat.

  4. Working in batches, fry the egg rolls until golden brown and crispy, about 3-4 minutes per side. Remove from the oil and drain on paper towels.

  5. Serve the Mexican egg rolls hot with sour cream and salsa for dipping.
