How To Make Mexican Chicken and Rice Casserole Recipe
A flavorful and comforting dish filled with tender chicken, rice, vegetables, and a blend of Mexican spices.

Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 cup uncooked long grain white rice
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (10 ounces) diced tomatoes and green chilies, undrained
- 1 can (14 ounces) low-sodium chicken broth
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- 1/2 cup shredded cheddar cheese
- Chopped fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F. Grease a 9×13-inch baking dish with cooking spray.

Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.

Remove the chicken from the skillet and set aside.

Add the onion, green bell pepper, and red bell pepper to the same skillet and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the uncooked rice, diced tomatoes, tomatoes with green chilies, chicken broth, chili powder, ground cumin, paprika, dried oregano, salt, and black pepper to the skillet. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 5-10 minutes, stirring occasionally.

Transfer the mixture to the prepared baking dish and spread it out evenly.

Top with the cooked chicken and sprinkle the shredded cheddar cheese over the top.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly.
