How To Make Spanish Rice Bake

Ingredients
- 1 cup rice
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 1 cup cooked chicken, shredded
- 1 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper, and cook until softened.

Add the minced garlic and cook for another minute.

Stir in the rice, diced tomatoes, chicken broth, cumin, paprika, chili powder, salt, and pepper. Bring to a boil.

Reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.

Stir in the cooked shredded chicken.

Transfer the mixture to a baking dish. Sprinkle the shredded cheddar cheese on top.

Bake in the preheated oven for about 20 minutes or until the cheese is melted and bubbly.

Garnish with fresh cilantro before serving.
