  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the chicken breasts in a baking dish and drizzle with olive oil.

  3. In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Sprinkle the spice mixture evenly over the chicken breasts, rubbing it in to coat them well.

  4. Pour the salsa over the chicken and sprinkle with shredded cheddar cheese.

  5. Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.

  6. Remove from the oven and let it rest for a few minutes.

  7. Sprinkle with chopped fresh cilantro before serving.
