How To Make Leek, Bacon & Mustard Quesadilla
Much like pizzas, the world is your oyster when it comes to quesadillas. Stuff them with whichever filling suits your fancy. If you’re stuck for ideas, then these quesadilla recipes are just what you need to get started on your own quesadilla party.

Ingredients
- 4 large flour tortillas
- 2 leeks, sliced
- 8 slices of bacon, cooked and crumbled
- 4 tbsp Dijon mustard
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Olive oil for cooking
Instructions

In a large skillet, heat some olive oil over medium heat. Add the sliced leeks and sauté until they soften, about 5 minutes. Season with salt and pepper.

Lay out the flour tortillas on a flat surface. On one half of each tortilla, spread 1 tablespoon of Dijon mustard.

Divide the sautéed leeks evenly among the tortillas, spreading them on the mustard side. Sprinkle the crumbled bacon on top of the leeks.

Sprinkle the shredded cheddar cheese evenly over the bacon. Fold the tortillas in half, pressing down gently to seal.

Heat a large skillet or griddle over medium heat. Place the quesadillas in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the quesadillas from the skillet and cut each one into wedges. Serve hot and enjoy!
