  • 2 cups masa harina (corn flour)
  • 1 ½ cups warm water
  • 1 tsp salt
  • 1 cup refried beans
  • 1 cup cooked shredded chicken
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • ½ cup crumbled queso fresco
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • 1 avocado, sliced
  • Lime wedges, for serving

Instructions

  1. In a large mixing bowl, combine masa harina, water, and salt. Mix until dough forms.

  2. Divide the dough into palm-sized balls and flatten them into thick discs.

  3. Cook the sopes on a preheated griddle or non-stick pan over medium heat for 2-3 minutes on each side, until they are cooked through and slightly crispy.

  4. Once cooked, remove the sopes from the griddle and let them cool slightly.

  5. Spread a spoonful of refried beans onto each sope, then top with shredded chicken, lettuce, tomatoes, queso fresco, sour cream, cilantro, and avocado slices.

  6. Serve the sopes warm, with lime wedges on the side for squeezing over the top.
