Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup diced green chilies
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 8 small flour tortillas
  • 1 cup enchilada sauce

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, mix together the cooked chicken, shredded cheese, sour cream, diced green chilies, chopped cilantro, cumin, chili powder, and garlic powder.

  3. Place a spoonful of the chicken mixture onto a tortilla and roll it up tightly. Repeat with the remaining tortillas.

  4. Place the rolled tortillas in a greased baking dish.

  5. Pour the enchilada sauce over the rolled tortillas, making sure they are fully covered.

  6. Sprinkle additional cheese on top if desired.

  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

  8. Remove from the oven and let it cool for a few minutes before serving.

  9. Serve the enchiladas hot, garnished with some fresh cilantro.
