How To Make Italian Chicken Cacciatore Recipe

Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1 can (14 oz) diced tomatoes
- 1/2 cup chicken broth
- 1/4 cup red wine
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- Fresh basil, for garnish
Instructions

Heat olive oil in a large skillet or Dutch oven over medium heat. Add chicken thighs and drumsticks, and cook until browned on all sides. Remove from skillet and set aside.

In the same skillet, add diced onion, minced garlic, sliced bell pepper, and sliced carrot. Cook until vegetables are softened.

Add diced tomatoes, chicken broth, red wine, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the skillet. Stir to combine.

Return the chicken to the skillet, coating it with the tomato sauce.

Cover and simmer for 45 minutes to 1 hour, or until the chicken is cooked through and tender.

Serve the Italian Chicken Cacciatore over cooked pasta or with crusty bread. Garnish with fresh basil.
