How To Make Boxty with Bacon, Eggs & Tomatoes

Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 medium onion, grated
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 slices bacon
  • 4 eggs
  • 2 tomatoes, sliced
  • 2 tbsp vegetable oil

Instructions

  1. In a large bowl, mix together grated potatoes, grated onion, flour, milk, salt, and black pepper until well combined.

  2. Heat a large non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.

  3. Take a heaping spoonful of the boxty mixture and shape it into a round pancake, about 1/4 inch thick. Place it in the skillet and cook for 3-4 minutes on each side, until golden brown and crispy. Repeat with the remaining mixture, adding more oil as needed.

  4. In a separate skillet, cook the bacon until crispy. Remove from the skillet and drain on a paper towel-lined plate.

  5. In the same skillet with the bacon fat, crack the eggs and cook to desired doneness.

  6. To serve, place a boxty pancake on a plate, top with a slice of bacon, a fried egg, and some tomato slices. Repeat with the remaining ingredients.

  7. Serve hot and enjoy!
