How To Make Soft-Boiled Egg, Bacon & Watercress Salad

Ingredients
- 4 large eggs
- 8 slices of bacon
- 4 cups of watercress, washed and trimmed
- 1/4 cup of chopped red onion
- 1/4 cup of cherry tomatoes, halved
- 1/4 cup of crumbled feta cheese
- dressing:
- 2 tablespoons of olive oil
- 1 tablespoon of red wine vinegar
- 1 teaspoon of Dijon mustard
- Salt and pepper to taste
Instructions

Fill a saucepan with enough water to cover the eggs. Bring to a boil and carefully add the eggs. Cook for 6 minutes for soft-boiled eggs. Remove from heat and place eggs in an ice bath to stop the cooking process. Once cool, peel and set aside.

Cook the bacon in a skillet over medium heat until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble into bite-sized pieces.

In a large bowl, combine the watercress, chopped red onion, cherry tomatoes, and crumbled feta cheese.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.

Pour the dressing over the salad and toss to combine.

Divide the salad onto 4 plates. Slice the soft-boiled eggs in half and place two halves on each plate. Sprinkle the crumbled bacon over the top.

Serve immediately and enjoy!
