Serves:
Ingredients
- 12 slices of bacon
- 4 eggs
- Salt and pepper, to taste
- 1 cup shredded cheese
- Optional fillings: diced tomatoes, avocado, cooked sausage, chopped herbs
Instructions
-
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
-
Take a muffin tin and turn it upside down. Wrap each slice of bacon around the bottom of each muffin cup, creating a bowl shape. Secure with toothpicks if needed.
-
Place the bacon-wrapped muffin tin on the prepared baking sheet and bake for 15-20 minutes, or until the bacon is crispy.
-
In a separate bowl, whisk together the eggs, salt, and pepper.
-
Remove the bacon bowls from the oven and carefully remove them from the muffin tin. Pour the whisked eggs into each bacon bowl, filling about halfway.
-
Sprinkle shredded cheese on top of the eggs and then add any desired fillings.
-
Place the filled bacon bowls back in the oven for another 5-7 minutes, or until the eggs are set and the cheese is melted.
-
Remove from the oven and let them cool slightly before removing the toothpicks. Serve and enjoy!
