  • 2 large potatoes, peeled and grated
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter, for frying

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture.

  2. In a large bowl, mix together the grated potatoes, flour, buttermilk, salt, and black pepper until well combined.

  3. Heat a large frying pan over medium heat and melt 1 tablespoon of butter.

  4. Drop spoonfuls of the potato mixture onto the hot pan, flattening them with the back of the spoon to form round pancakes.

  5. Cook the boxty for about 4-5 minutes on each side, until golden brown and crispy.

  6. Transfer the cooked boxty to a plate and keep warm while cooking the remaining mixture, adding more butter to the pan as needed.

  7. Serve hot with your favorite toppings or as a side dish with Irish stew or bacon.
