How To Make Indonesian Chicken Curry Recipe

A spicy and aromatic chicken curry dish made with Indonesian spices and coconut milk.

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1 tbsp lemongrass, minced
  • 1 tbsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat vegetable oil over medium-high heat.

  2. Add onions and cook until softened, about 5 minutes.

  3. Add garlic, ginger, lemongrass, and all the spice powders. Cook for 2-3 minutes.

  4. Add chicken and stir to coat in the spices.

  5. Pour in the coconut milk and bring to a boil. Reduce heat to low and simmer for 45-50 minutes, stirring occasionally.

  6. Season with salt and pepper to taste.

  7. Serve with steamed rice.
