How To Make Indonesian Chicken Curry Recipe
A spicy and aromatic chicken curry dish made with Indonesian spices and coconut milk.

Ingredients
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 tbsp lemongrass, minced
- 1 tbsp coriander powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 can (13.5 oz) coconut milk
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions

In a large pot, heat vegetable oil over medium-high heat.

Add onions and cook until softened, about 5 minutes.

Add garlic, ginger, lemongrass, and all the spice powders. Cook for 2-3 minutes.

Add chicken and stir to coat in the spices.

Pour in the coconut milk and bring to a boil. Reduce heat to low and simmer for 45-50 minutes, stirring occasionally.

Season with salt and pepper to taste.

Serve with steamed rice.
