How To Make Indonesian Serabi Recipe

Indonesian pancake made with rice flour and coconut milk, served with sweet coconut milk sauce.

Serves:

Ingredients

  • 2 cups rice flour
  • 2 cups coconut milk
  • 1/2 cup water
  • 1/4 cup sugar
  • 1/2 tsp baking powder
  • Pinch of salt
  • For the sauce:
  • 1 can coconut milk
  • 1/4 cup sugar
  • 1 pandan leaf, tied into a knot (optional)

Instructions

  1. Mix rice flour, coconut milk, water, sugar, baking powder, and salt in a bowl until smooth batter is formed.

  2. Heat a non-stick pan over medium heat and lightly grease it with oil.

  3. Pour 1/2 cup of batter into the pan and cook until the surface sets. Flip the pancake and cook the other side for an additional minute.

  4. Repeat the process with the remaining batter.

  5. For the sauce, mix coconut milk, sugar, and pandan leaf in a saucepan. Bring the mixture to a boil, stirring constantly, and let it simmer on low heat for 10-15 minutes until it thickens.

  6. Serve the Serabi with the coconut milk sauce drizzled on top.
