Ingredients

  • 1 medium cauliflower, cut into florets
  • 1/2 cup besan (chickpea flour)
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • Oil for frying
  • 1/4 cup tamarind chutney
  • 1/4 cup mint chutney
  • 1/4 cup yogurt
  • 1/4 cup chopped onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup chopped coriander leaves
  • Chaat masala for sprinkling
  • Sev for garnishing

Instructions

  1. In a mixing bowl, combine besan, red chili powder, turmeric powder, and salt. Add water gradually to make a thick batter. Dip each cauliflower floret in the batter, ensuring it is well coated.

  2. Heat oil in a deep pan and fry the cauliflower florets until golden and crispy. Remove from the pan and drain excess oil on a kitchen towel.

  3. In a serving dish, arrange the fried cauliflower florets. Drizzle tamarind chutney, mint chutney, and yogurt over them.

  4. Sprinkle chopped onions, tomatoes, and coriander leaves on top. Sprinkle chaat masala for added flavor.

  5. Lastly, garnish with sev and serve the cauliflower chaat immediately.
