How To Make Comté Cheese Soufflé

Ingredients
- 4 tbsp butter, divided
- 4 tbsp all-purpose flour
- 1 cup milk
- 1 cup grated Comté cheese
- 4 eggs, separated
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pinch of nutmeg
- 1/4 cup grated Parmesan cheese
Instructions

Preheat the oven to 375°F (190°C). Grease four ramekins with 1 tbsp of butter each.

In a saucepan, melt 3 tbsp of butter over medium heat. Stir in the flour and cook for 1 minute.

Gradually whisk in the milk, making sure there are no lumps. Cook until the mixture thickens, about 3 minutes.

Remove from heat and stir in the Comté cheese until melted and smooth.

In a separate bowl, beat the egg yolks. Gradually add the cheese mixture, stirring well.

In another clean bowl, beat the egg whites until stiff peaks form.

Gently fold the egg whites into the cheese mixture, being careful not to deflate the whites.

Season with salt, pepper, and nutmeg. Divide the mixture evenly among the ramekins.

Sprinkle the tops with Parmesan cheese and bake for 20-25 minutes, or until puffed and golden.
