How To Make Soufflé Pancakes

Ingredients

  • 4 eggs, separated
  • 1/4 cup all-purpose flour
  • 1/4 cup milk
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp cream of tartar
  • Maple syrup, for serving
  • Fresh berries, for garnish

Instructions

  1. In a large mixing bowl, whisk the egg yolks until pale and creamy.

  2. Gradually add the flour, milk, sugar, and vanilla extract to the egg yolks. Mix until well combined.

  3. In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form.

  4. Gently fold the beaten egg whites into the pancake batter.

  5. Heat a non-stick pan over medium heat and grease lightly.

  6. Spoon about 1/4 cup of the batter onto the pan for each pancake.

  7. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for an additional 1-2 minutes until golden brown.

  8. Serve the soufflé pancakes immediately with maple syrup and fresh berries.
