Ingredients

  • 4 cups Chinese cabbage, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped peanuts
  • For the dressing:
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 2 tbsp sesame oil
  • 1 clove garlic, minced
  • 1 tsp grated ginger

Instructions

  1. In a large mixing bowl, combine the cabbage, bell pepper, red onion, and cilantro. Toss well.

  2. In a separate bowl, whisk together the rice vinegar, soy sauce, honey, sesame oil, garlic, and ginger.

  3. Drizzle the dressing over the salad and toss well to coat.

  4. Garnish with chopped peanuts before serving.
