How To Make African Quinoa Pilaf Recipe

This dish is a delicious blend of African flavors, combined with the superfood quinoa.

Ingredients

  • 1 cup quinoa
  • 2 cups chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup raisins
  • 1/2 cup sliced almonds
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Rinse quinoa in a fine mesh strainer and drain.

  2. In a saucepan, heat broth and quinoa over medium-high heat until boiling.

  3. Reduce heat to low, cover and simmer for 15-20 minutes or until liquid is absorbed and quinoa is tender.

  4. In a skillet, heat olive oil over medium heat. Cook onion and garlic until softened.

  5. Add spices, salt, and black pepper to the skillet. Cook for 1-2 minutes to release the flavors.

  6. Add cooked quinoa, raisins, and almonds. Stir to combine.

  7. Cook for another 1-2 minutes or until heated through.

  8. Stir in cilantro and serve hot.
