Ingredients

  • 500g boneless chicken, cut into chunks
  • 2 large onions, finely chopped
  • 3 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tomatoes, diced
  • 2 bell peppers, sliced
  • 2 carrots, sliced
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of paprika
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of chili flakes (adjust according to taste)
  • 400ml coconut milk
  • Salt to taste
  • 2 tablespoons of cooking oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and sauté until golden brown.

  2. Add garlic and ginger to the pot and cook for another 2 minutes.

  3. Add tomatoes and cook until softened, about 5 minutes.

  4. Mix in curry powder, turmeric, paprika, cumin, coriander, and chili flakes. Cook for 2 minutes to release the fragrance of the spices.

  5. Add chicken pieces to the pot and cook until lightly browned.

  6. Pour in coconut milk and bring to a simmer. Cover and let it cook gently for 45 minutes, or until chicken is tender.

  7. Add bell peppers and carrots to the curry and cook for an additional 10 minutes, or until vegetables are tender.

  8. Season with salt to taste.

  9. Serve the African curry over steamed rice or with warm naan bread.

  10. Garnish with fresh cilantro.
