How To Make Marinated Beet Salad

Ingredients
- 4 medium-sized beets, cooked and peeled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 clove garlic, minced
- Salt and pepper, to taste
- 4 cups mixed greens
- 1/4 cup crumbled goat cheese
- 1/4 cup chopped walnuts
Instructions

Slice the cooked and peeled beets into thin rounds.

In a small bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, salt, and pepper.

Place the beet slices in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes, or overnight in the refrigerator.

In a large salad bowl, arrange the mixed greens.

Top the greens with the marinated beet slices.

Sprinkle crumbled goat cheese and chopped walnuts over the top.

Drizzle any remaining marinade over the salad.

Toss gently to combine all ingredients.
