How To Make African Vegetable Stew

Ingredients

  • 1 tbsp of olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, peeled and diced
  • 2 sweet potatoes, peeled and diced
  • 1 bell pepper, diced
  • 1 cup of chopped kale
  • 1 15 oz can of chopped tomatoes
  • 2 cups of vegetable broth
  • 1 tsp of ground cumin
  • 1 tsp of smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion and garlic, and sauté until softened.

  3. Add the carrots, sweet potatoes, and bell pepper, and cook for 5 minutes.

  4. Add the kale, chopped tomatoes, vegetable broth, cumin, smoked paprika, salt, and pepper.

  5. Bring to a boil, then reduce the heat and let simmer for 20 minutes, or until vegetables are tender.

  6. Serve hot with bread or rice.
