Ingredients

  • 1 cup quinoa
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 orange bell pepper, diced
  • 1 small red onion, diced
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and black pepper, to taste

Instructions

  1. Cook quinoa according to package instructions and let cool.

  2. In a large mixing bowl, combine quinoa, bell peppers, red onion, chickpeas, parsley, cilantro, mint, and feta cheese.

  3. In a separate bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour the dressing over the salad and toss well.

  4. Serve chilled or at room temperature.
