How To Make Whole Foods Mediterranean Quinoa Recipe
A healthy and flavorful dish packed with Mediterranean flavors.

Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 red onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1/2 cup chopped olives
- 1/4 cup chopped parsley
- 2 tbsp olive oil
- salt and pepper to taste
Instructions

Rinse the quinoa and add it to a pot with the vegetable broth. Bring to a boil, then lower heat and simmer for 15-20 minutes, or until all the liquid has been absorbed and the quinoa is tender.

In a large skillet, add the olive oil and heat it over medium heat. Add the garlic and onion, and sauté until they are fragrant and the onion is translucent.

Add in the bell peppers and zucchini, and season with salt and pepper to taste. Cook for another 5-7 minutes or until they are tender.

Add in the quinoa, olives, and parsley to the skillet and mix everything together.
