How To Make Pollo Loco Churros Recipe

Irresistibly sweet and crispy churros served with a spiced chocolate dip.

Serves:

Ingredients

  • 1 cup of water
  • 1/2 cup of unsalted butter
  • 1/4 tsp of salt
  • 2 tbsp of granulated sugar
  • 1 cup of all-purpose flour
  • 2 large eggs
  • 1/2 tsp of vanilla extract
  • 1/2 cup of cinnamon sugar
  • Vegetable oil for frying
  • 1/2 cup of semi-sweet chocolate chips
  • 1/2 cup of heavy cream
  • 1/4 tsp of ground cinnamon

Instructions

  1. In a medium saucepan, combine water, butter, salt, and sugar and bring to a boil over medium-high heat.

  2. Remove from heat and add flour, stirring until well combined and the mixture forms a ball.

  3. Add eggs one at a time, stirring well after each addition. Stir in vanilla extract.

  4. Heat oil for frying in a large heavy-bottomed skillet over medium-high heat.

  5. Transfer the dough to a piping bag fitted with a large star tip. Pipe the dough into the hot oil in 4 inch lengths.

  6. Fry until golden brown, turning occasionally. Drain on paper towels, and then roll in cinnamon sugar.

  7. In a small saucepan, melt chocolate chips with heavy cream over low heat. Stir until smooth and then stir in cinnamon.

  8. Serve churros with spiced chocolate dip.
