How To Make Pollo Loco Empanadas Recipe
This recipe is filled with shredded chicken, cheese, and flavorful spices, all wrapped in a crispy empanada dough.

Ingredients
- 2 cups cooked shredded chicken
- 1 cup shredded cheddar cheese
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper, to taste
- 1 egg, beaten
- 1 package empanada dough discs
Instructions

Preheat oven to 375°F.

In a bowl, mix together the shredded chicken, cheese, onion, red bell pepper, garlic, chili powder, cumin, salt, and pepper.

Take each empanada dough disc, and spoon about 2 tablespoons of the chicken mixture in the center. Fold the dough over and use a fork to press the edges together to seal.

Brush each empanada with the beaten egg.

Bake for 20-25 minutes or until golden brown and crispy.
