How To Make Pollo Loco Empanadas Recipe

This recipe is filled with shredded chicken, cheese, and flavorful spices, all wrapped in a crispy empanada dough.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 1 egg, beaten
  • 1 package empanada dough discs

Instructions

  1. Preheat oven to 375°F.

  2. In a bowl, mix together the shredded chicken, cheese, onion, red bell pepper, garlic, chili powder, cumin, salt, and pepper.

  3. Take each empanada dough disc, and spoon about 2 tablespoons of the chicken mixture in the center. Fold the dough over and use a fork to press the edges together to seal.

  4. Brush each empanada with the beaten egg.

  5. Bake for 20-25 minutes or until golden brown and crispy.
