How To Make Pollo Loco Enchiladas Recipe

Ingredients

  • 2 cups cooked and shredded chicken
  • 10 corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat oven to 350°F.

  2. Spread 1/4 cup enchilada sauce on the bottom of a 9×13 inch baking dish.

  3. Heat tortillas in a warm pan or on a griddle until pliable, then dip each tortilla in enchilada sauce and place 1/4 cup of chicken in the center.

  4. Roll tortillas tightly and place seam-side down in the baking dish.

  5. Pour remaining enchilada sauce over the top of the tortillas.

  6. Sprinkle cheddar cheese on top of the enchiladas.

  7. Bake for 35-40 minutes, until cheese is melted and bubbling.

  8. Top with chopped green onions and serve.
