How To Make Pollo Loco Enchiladas Recipe
A satisfying and flavorful dish made with shredded chicken and enchilada sauce.

Ingredients
- 2 cups cooked and shredded chicken
- 10 corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
Instructions

Preheat oven to 350°F.

Spread 1/4 cup enchilada sauce on the bottom of a 9×13 inch baking dish.

Heat tortillas in a warm pan or on a griddle until pliable, then dip each tortilla in enchilada sauce and place 1/4 cup of chicken in the center.

Roll tortillas tightly and place seam-side down in the baking dish.

Pour remaining enchilada sauce over the top of the tortillas.

Sprinkle cheddar cheese on top of the enchiladas.

Bake for 35-40 minutes, until cheese is melted and bubbling.

Top with chopped green onions and serve.
