How To Make Pedro Mexican Restaurante Tres Leches Cake
A classic Mexican cake soaked in three types of milk and topped with whipped cream.
Serves:
Ingredients
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 cup unsalted butter, softened
- 1 cup white sugar
- 5 eggs
- 1/2 cup whole milk
- 1/2 cup evaporated milk
- 1/2 cup sweetened condensed milk
- 1/2 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
Instructions
-
Preheat the oven to 350°F. Grease a 9×9 inch baking pan.
-
In a medium bowl, sift together the flour and baking powder. Set aside.
-
In a large bowl, cream the butter and sugar until light and fluffy.
-
Add the eggs, one at a time, beating well after each addition.
-
Gradually add the flour mixture to the butter mixture, mixing until just combined.
-
Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
-
In a bowl, whisk together the whole milk, evaporated milk, sweetened condensed milk, and vanilla extract.
-
Once the cake has cooled, pierce holes all over the top of the cake with a fork.
-
Slowly pour the milk mixture over the cake, letting it soak in.
-
In a large bowl, whip the heavy cream and powdered sugar until it forms stiff peaks.
-
Spread the whipped cream over the cake and chill for at least 2 hours before serving.
