How To Make Pedro Mexican Restaurante Fish Veracruz Recipe
A zesty and flavorful fish dish served Veracruz style

Ingredients
- 4 fish fillets (such as red snapper or sea bass)
- 1 tablespoon olive oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 handful cilantro, chopped
- 1 can diced tomatoes (14.5 oz)
- 1/4 cup green olives, sliced
- 1 jalapeño pepper, seeded and minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
- 1 lime, cut into wedges
Instructions

Preheat oven to 375°F.

Season the fish fillets with salt and black pepper.

Heat the olive oil in a saucepan and sauté the onions and garlic until softened.

Add the cilantro and sauté for another 30 seconds.

Stir in the diced tomatoes (with their juice), green olives, jalapeño pepper, and oregano.

Simmer the sauce for about 5 minutes.

Place the fish fillets in an oven-proof dish and top with the tomato sauce.

Bake in the preheated oven for 20-25 minutes or until the fish is cooked through.

Serve the fish Veracruz style with lime wedges on the side.
