How To Make Pedro Mexican Restaurante Churros

Crispy, cinnamon-sugar coated treats with a soft, fluffy center – perfect for dessert or a midday snack.

Preparation: 10 minutes
Cooking: 15 minutes
Total: 25 minutes

Serves:

Ingredients

  • 1 cup water
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 tbsp vegetable oil
  • 1 cup all-purpose flour
  • 2 quarts vegetable oil, for frying
  • 1/2 cup granulated sugar
  • 1 tbsp cinnamon powder

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 tbsp sugar, 1/2 tsp salt, and 2 tbsp vegetable oil over medium-high heat. Bring to a boil, stirring occasionally.

  2. Remove from heat and add 1 cup all-purpose flour. Stir to combine until the mixture forms a smooth paste.

  3. Transfer the mixture to a piping bag fitted with a large star tip.

  4. In a large, heavy-bottomed pot, pour in 2 quarts of vegetable oil and heat over medium-high heat to 375°F.

  5. Pipe 5-inch lengths of dough into the hot oil, using kitchen scissors to cut each length. Fry the churros until golden brown, about 2-4 minutes per side, then remove with a slotted spoon and drain on paper towels.

  6. In a small bowl, combine 1/2 cup granulated sugar and 1 tbsp cinnamon powder. Roll the churros in the mixture until evenly coated.

  7. Serve warm and enjoy!
