How To Make Pedro Mexican Restaurante Churros

Ingredients
- 1 cup water
- 2 tbsp granulated sugar
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 1 cup all-purpose flour
- 2 quarts vegetable oil, for frying
- 1/2 cup granulated sugar
- 1 tbsp cinnamon powder
Instructions

In a medium saucepan, combine 1 cup water, 2 tbsp sugar, 1/2 tsp salt, and 2 tbsp vegetable oil over medium-high heat. Bring to a boil, stirring occasionally.

Remove from heat and add 1 cup all-purpose flour. Stir to combine until the mixture forms a smooth paste.

Transfer the mixture to a piping bag fitted with a large star tip.

In a large, heavy-bottomed pot, pour in 2 quarts of vegetable oil and heat over medium-high heat to 375°F.

Pipe 5-inch lengths of dough into the hot oil, using kitchen scissors to cut each length. Fry the churros until golden brown, about 2-4 minutes per side, then remove with a slotted spoon and drain on paper towels.

In a small bowl, combine 1/2 cup granulated sugar and 1 tbsp cinnamon powder. Roll the churros in the mixture until evenly coated.
