How To Make Enchiladas Suizas

Ingredients
- 8 corn tortillas
- 2 cups cooked shredded chicken
- 1 cup sour cream
- 1 cup green salsa
- 1 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions

Preheat your oven to 350°F (175°C).

In a small bowl, mix together the sour cream and green salsa. Season with salt and pepper.

Spread a small amount of the sour cream mixture on the bottom of a baking dish.

Dip a corn tortilla in the sour cream mixture to coat it, then place some shredded chicken in the center and roll it up. Place the enchilada seam-side down in the baking dish. Repeat with the remaining tortillas and chicken.

Pour the remaining sour cream mixture over the enchiladas, making sure to cover them completely.

Sprinkle the shredded Monterey Jack cheese over the top of the enchiladas.

Cover the baking dish with foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Garnish with chopped cilantro before serving.
