How To Make Mimi’s Cafe’s Eggs Benedict Recipe
A classic breakfast dish consisting of poached eggs and ham on an English muffin, topped with hollandaise sauce.

Ingredients
- 4 English muffins
- 8 slices of Canadian bacon or ham
- 8 eggs
- 1 tbsp of white vinegar
- Hollandaise sauce:
- 4 egg yolks
- 1 tbsp of lemon juice
- 1/2 cup of unsalted butter
- Salt and pepper to taste

Toast the English muffins and cook the Canadian bacon or ham in a skillet over medium heat.

To poach the eggs, fill a large pot with water and heat until it reaches a simmer. Stir in the white vinegar. Crack the eggs into the water and cook until the whites are set but yolks are still runny.

To make the hollandaise sauce, whisk together the egg yolks and lemon juice in a heatproof bowl. Melt butter in a small saucepan over low heat. Gradually whisk the melted butter into the egg mixture, whisking constantly. Season with salt and pepper.

To assemble, place a slice of Canadian bacon or ham on each English muffin half, followed by a poached egg. Spoon hollandaise sauce over the top.
