How To Make Lainy’s Kare-Kare Recipe

A classic Filipino stew made with peanut butter sauce and a variety of vegetables and meats.

Total: 1 hour and 50 minutes

Serves:

Ingredients

  • 1 lb oxtail
  • 1 lb beef tripe
  • 6 cups water
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup peanut butter
  • 1 eggplant, sliced
  • 1 bundle string beans, cut into 2 inch pieces
  • 1 bunch bok choy, chopped
  • 1/4 cup annatto oil
  • fish sauce, to taste
  • ground black pepper, to taste

Instructions

  1. In a pot, boil oxtail and beef tripe in water until tender. Set aside broth.

  2. In a separate pot, sauté onion and garlic until fragrant.

  3. Add peanut butter and stir until well blended.

  4. Pour in the strained meat broth and mix well.

  5. Add sliced eggplants and simmer for 10 minutes.

  6. Mix in string beans and bok choy. Cook for another 5 minutes or until vegetables are tender.

  7. Season with fish sauce and black pepper.

  8. Serve with bagoong (shrimp paste) and rice.
