Ingredients

  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans black-eyed peas, drained and rinsed
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions

  1. In a large skillet over medium-high heat, cook the sausage until browned on both sides. Remove from skillet and set aside.

  2. In the same skillet, sauté the onion and garlic until softened, about 3-4 minutes.

  3. Add the black-eyed peas, chicken broth, smoked paprika, cayenne pepper, salt, and pepper to the skillet. Bring to a boil and then reduce heat to low and let simmer for 30 minutes.

  4. Add the smoked sausage to the skillet and let simmer for an additional 10-15 minutes, or until everything is heated through.

  5. Serve hot and enjoy!
