How To Make Eldon’s Stuffed Peppers Recipe
A savory and satisfying recipe for stuffed peppers filled with ground beef, rice, and spices.

Ingredients
- 4 large bell peppers, tops and seeds removed
- 1 lb ground beef
- 1 small onion, diced
- 1 garlic clove, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/2 cup uncooked rice
- 1 cup beef broth
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F.

In a large skillet, brown the ground beef over medium-high heat.

Add onion and garlic; sauté for 5 minutes or until tender.

Stir in paprika, cumin, and chili powder.

Add uncooked rice and beef broth. Bring to a boil.

Reduce heat; cover and simmer for 20 minutes or until rice is tender.

Stir in parsley and season with salt and pepper.

Stuff mixture into each pepper and place in a baking dish.

Bake for 45-50 minutes or until peppers are tender and filling is hot and bubbly.
