Ingredients

  • 4 bone-in chicken thighs
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1/2 cup diced onion
  • 1/2 cup diced green bell pepper
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a large oven-safe pot, sear the chicken thighs until golden brown on both sides. Set aside.

  3. In the same pot, sauté onion and green pepper until fragrant.

  4. Add in rice, chicken broth, garlic powder, thyme, paprika, salt, and pepper, and stir to combine.

  5. Place chicken thighs on top of the rice mixture.

  6. Cover the pot and bake in the oven for 45-50 minutes or until the chicken is cooked through and the rice is tender.
