Ingredients

  • 1 lb stew beef, cubed
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.

  2. Brown the beef on all sides, then remove and set aside.

  3. Add onion and garlic to the pot and sauté until softened.

  4. Add potatoes, carrots, and celery to the pot and cook for a few minutes.

  5. Stir in beef broth, tomato paste, thyme, salt, and pepper.

  6. Add the beef back to the pot and bring to a boil.

  7. Reduce heat to low, cover, and simmer for 2 hours or until meat is tender.

  8. Serve hot and enjoy!
