How To Make Aunt Susie’s Chicken Noodle Soup
A comforting and hearty soup, packed with tender chicken and fresh vegetables in a flavorful broth.

Ingredients
- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 sprigs fresh thyme
- 1 bay leaf
- 2 cups uncooked egg noodles
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, combine the chicken breasts, chicken broth, carrots, celery, onion, garlic, thyme, and bay leaf.

Bring the soup to a simmer, then cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.

Remove the chicken from the pot and shred it with two forks. Discard any bones or fat.

Return the shredded chicken to the pot, along with the egg noodles. Bring the soup back to a simmer and cook for an additional 10-12 minutes, or until the noodles are tender.

Season with salt and pepper, to taste. Garnish with chopped fresh parsley before serving.
