How To Make Coconut Oil Curry Recipe

Ingredients

  • 2 tbsp coconut oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp paprika
  • 1 can diced tomatoes
  • 1 can chickpeas, drained and rinsed
  • 1 can coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro leaves, chopped (for garnish)

Instructions

  1. Heat coconut oil in a large saucepan over medium heat.

  2. Add onion, garlic, and ginger. Cook for 5 minutes or until onion is translucent.

  3. Add the ground cumin, coriander, turmeric, garam masala, and paprika. Cook for 2 minutes or until fragrant.

  4. Add the diced tomatoes, chickpeas, and coconut milk.

  5. Bring to a simmer and let cook for 20 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot with rice or naan bread. Garnish with chopped cilantro leaves.
