How To Make Coconut Oil Curry Recipe
A flavorful and aromatic vegan curry made with coconut oil and spices.

Ingredients
- 2 tbsp coconut oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp paprika
- 1 can diced tomatoes
- 1 can chickpeas, drained and rinsed
- 1 can coconut milk
- Salt and pepper, to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions

Heat coconut oil in a large saucepan over medium heat.

Add onion, garlic, and ginger. Cook for 5 minutes or until onion is translucent.

Add the ground cumin, coriander, turmeric, garam masala, and paprika. Cook for 2 minutes or until fragrant.

Add the diced tomatoes, chickpeas, and coconut milk.

Bring to a simmer and let cook for 20 minutes.

Season with salt and pepper to taste.

Serve hot with rice or naan bread. Garnish with chopped cilantro leaves.
