Ingredients

  • 1 lb breakfast sausage
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • salt and pepper, to taste
  • 4 eggs, fried or poached

Instructions

  1. In a large skillet, heat olive oil over medium heat.

  2. Add sausage and cook until browned, breaking it up into small pieces with a spoon.

  3. Add sweet potatoes and onion to the skillet. Cook until the potatoes are tender and the onion is translucent.

  4. Add garlic, paprika, salt, and pepper. Cook for an additional 2-3 minutes, until fragrant.

  5. Remove from heat and top with fried or poached eggs.
