How To Make Tarragon Roast Chicken with Summer Greens

Ingredients
- 1 whole chicken
- 2 tbsp olive oil
- 2 tbsp fresh tarragon, chopped
- Salt and pepper, to taste
- 6 cups mixed summer greens (spinach, arugula, lettuce)
- 1 lemon, sliced
- 4 cloves of garlic, minced
Instructions

Preheat the oven to 375°F (190°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, tarragon, salt, and pepper.

Rub the chicken all over with the tarragon mixture, making sure to get it under the skin as well.

Stuff the chicken cavity with the lemon slices and minced garlic.

Place the chicken on a roasting pan and roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

While the chicken is roasting, wash the summer greens and place them in a large salad bowl.

When the chicken is done, remove it from the oven and let it rest for 10 minutes before carving.

Serve the roast chicken slices on top of the summer greens.
