How To Make Chopped Tarragon, Bacon & Chicken Salad

Ingredients
- 4 slices of bacon
- 2 chicken breasts, cooked and shredded
- 2 cups of mixed salad greens
- 1/4 cup of fresh tarragon leaves
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of sliced red onion
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions

Cook the bacon until crispy, then crumble it into small pieces.

In a large bowl, combine the shredded chicken, salad greens, tarragon leaves, cherry tomatoes, red onion, and crumbled feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Divide the salad among 4 plates and garnish with the crispy bacon.
