Ingredients

  • 4 slices of bacon
  • 2 chicken breasts, cooked and shredded
  • 2 cups of mixed salad greens
  • 1/4 cup of fresh tarragon leaves
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 cup of sliced red onion
  • 1/4 cup of crumbled feta cheese
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the bacon until crispy, then crumble it into small pieces.

  2. In a large bowl, combine the shredded chicken, salad greens, tarragon leaves, cherry tomatoes, red onion, and crumbled feta cheese.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Divide the salad among 4 plates and garnish with the crispy bacon.

  5. Serve immediately.
