How To Make Spicy Chicken Cacciatore

Ingredients
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 jalapeño pepper, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup chicken broth
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1/4 cup chopped fresh parsley
Instructions

Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.

Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside.

In the same skillet, add the onion, garlic, red bell pepper, green bell pepper, and jalapeño pepper. Cook until the vegetables are softened, about 5 minutes.

Stir in the diced tomatoes, tomato paste, chicken broth, oregano, basil, thyme, and red pepper flakes. Bring to a simmer.

Return the chicken breasts to the skillet and spoon the sauce over them. Cover and cook for 30 minutes, or until the chicken is cooked through.

Sprinkle with fresh parsley before serving. Serve hot with pasta or crusty bread.
